These are the first cookie in my 25 Days of Christmas Cookie countdown. Coconut Jumbles are kind of a cross between a macaroon and a soft chewy sugar cookie. Add some red and green sugar for Christmas or blue and yellow sugar to dress them up for Hanukkah.
Coconut Jumbles
A soft and chewy cookie packed with shredded coconut.
Ingredients
- 1/2 C (1 stick) unsalted butter at room temperature
- 1/2 C granulated sugar
- 1 large egg
- 1 C + 2 Tbsp all purpose flour
- 1/4 tsp baking soda
- 1/2 tsp fine kosher salt
- 1 C shredded coconut
Instructions
Preheat your oven to 375F
Cream the butter together with the sugar until light and fluffy
Beat in the egg until fully incorporated
Whisk together the dry ingredients (flour, baking soda, and salt)
Beat the dry ingredients into the butter mixture until just combined
Fold in the shredded coconut
Line 2 cookie sheets with parchment paper
Portion into 1.5-2 tablespoon mounds approximately 2 inches apart
Bake for 10-12 minutes until the edges begin to turn a light brown.
Allow to cool on the cookie sheet for 5 minutes before moving to a rack to cool completely
